Greeting: (do not use first names, and do not use Mrs. for women. Ms. and Mr. last name is always appropriate)
Body: Punctuation, grammar, and capitalization are very important in a professional email. Think of 4-5 sentences to write that explains why you are a good fit for this position, and what you like about the company or interview process.
Closing: Just like saying goodbye, a closing is a way of signing out. Thanking them for their time is always a good option. Then, a salutation such as Sincerely, Regards, etc is appropriate.
